These are the burrito-like pancakes with stuffing like chopped eggs, mushrooms, chopped vegetables and the like. Thus, such pancakes are some sort of equivalent of doughnuts, or the ancestors of a closed pizza.
They are baked in the following way. Take a frying pan, butter it down with a dairy butter and pour on it the ready dough, but a bit less than usual. When half ready, put the stuffing onto the pancake and pour the new portion of dough above it so that the stuffing be completely covered with it. Then turn the pancake and bake until ready.
